I concur! (Another North eastern new here) I’ve been on the same quest since relocating in 2006. Westman’s scallion cream cheese is the best. The whitefish salad is very good, but not as good as Dingfelders. I swear, putting together a good brunch (or break-fast) in Seattle is about as complicated at BOTW side quest. One place for bagels, another for schmear, a third for smoked fish....

Dingfelders is doing great whitefish salad and fancy smoked sable. Their kippered salmon is also really good. I like Lummi Island Wild's smoked salmon a bit better and the smoked salmon from Wilson Fish (ballard farmers market) is some of my favorite in the city. Matt at Loxsmith has some amazing smoked fish too! I haven't found a reliable source for truly amazing wild salmon lox, nova, gravlax and pastrami salmon though. A hear or more ago Matt had some fantastic pastrami salmon, but not sure if he made that batch, or brought it in.

Your post did inspire me to check out Little Portage Bay Cafe this morning. Bagels were still on. surface had a nice blister and crack, inside had a good crumb and chew, but it was almost a little too airy. It was amazing, but perhaps I've become used to a slightly denser, sour dough bagel. With the semolina flower on the bottom, it was almost reminiscent of a pizza crust.

Good to know! Yeah I believe that Little Market takes their dough that they use for pizzas and repurposes it for the bagels. Not traditional but it defintely works!
