In the early 2000s when I worked nearby, I was pretty sure that they got their bagels from Bagel Oasis. That may no longer be the case, or maybe it never was. But they still look pretty similar, just going by those photos.
Based on my now 20 year old memories, my guess would be that this is what happens to Bagel Oasis bagels when they're taken out of the oven and put hot into paper bags, where they sit for an hour or two, steaming and cooling, before being unloaded into the case at Bean and Bagel.
