Seattle bagel news: Lox heist, new hires, and bagel banh mi

There’s nothing
over at loves more than a good heist. The weirder the item at the center of the heist, the better. LEGO blocks, crab legs, toilets... people just steal the strangest stuff.I hope that Brian appreciates the news that there has been a lox heist here in Seattle.
Loxsmith reached out to say thieves broke into the Beacon Hill store this week and stole some lox. Specifically, they took three five-pound filets, which retail for around $600.
“I may have to lock up the lox at night,” Loxsmith owner Matthew Segal said. “Salmon so good you would risk going to jail for it.”
Oddly, or perhaps because they could only carry so much fish, the thief left three filets of wild king Nova lox. They also left the black cod, which is more expensive than the fish they stole.
“Clearly not connoisseurs,” Segal added.
This is the second time someone has broken into the store and taken some cured fish with them. Segal said he plans on making an insurance claim, upgrading his camera system, and getting a locksmith (not a loxsmith) to fix the broken lock on the front door.
Those cameras came in handy the very next night when someone reportedly tried to break into the store again, this time pretending to be a window-washer.
The good news is that Loxsmith still has “100 pounds of wild king lox on deck.”
In case you missed it, Eater Seattle asked me to update their map of the Best Bagels in Seattle. You probably won’t be too surprised to see who made the list (and who didn’t). To be included, you had to have a brick-and-mortar location, which is why you don’t see Hey Bagel, Salmonberry Goods, or Sully Eats on there (for now).
Speaking of Hey Bagel and storefronts, Andrew Rubinstein’s 2.0 bagel company has begun preparing for its grand opening in U Village later this year (current plans call for late November/early December). A general manager job posting has gone live.
“The General Manager is an essential leader of Hey Bagel,” reads the listing. “Because we are small but mighty, the GM will be second in command. The General Manager executes Hey Bagel's mission of providing and leading an example of hospitality. The General Manager has the responsibility to ensure we maintain a vibrant and efficient retail space while obsessively focusing on the quality of our bagels and the customer's experience.”
Job perks include 30% off all Hey Bagel products, $15/week in credit to share with friends/family, and “unlimited coffee and bagel” during shifts. We assume the lack of a plural on the bagel means you only get one bagel per shift, which is for the best. Can you imagine being able to do all-you-can-eat bagels during work?
The Seattle Times food writer Tan Vinh rounded up some of the most recent Seattle restaurant openings and included a few bagel spots. Along with mentioning Backyard Bagel and Toasted, he mentioned Yellow Bee Market & Cafe at 922 E Yesler Way, which features “The Bagel Banh Mi.”
“Taste the best of both worlds: Vietnamese cuisine paired with a classic brunch bread,” reads their website.
They offer four different bagel flavors (Plain, everything seasoning, jalapeño cheddar, and cheddar) which you can pair with any of the banh mi options on their menu, including beef short rib, pork meatball, fried tofu, and grilled chicken.
